Makes 2 smoothies
INGREDIENTS
1 cup unsweetened almond or coconut milk, chilled 2 frozen bananas, sliced or chopped 1 cup packed organic spinach leaves or other mild green leaf like romaine lettuce or chard (if using chard, remove the stem) 10 mint leaves ( about 2 tablespoons, chopped) 1 tablespoon cacao nibs (or plant based chocolate chips) 2 tablespoons hemp seeds (optional) shredded coconut and additional cacao nibs or chips for garnish
Place milk in a blender then add the bananas, spinach, mint and hemp seeds if using. Blend on high until ingredients are smooth and well combined. Next, add cacao nibs or chocolate chips to the blender and pulse a few times until they slightly break up in the smoothie. Garnish and serve immediately.
So you say you want a thicker experience, a smoothie bowl or pudding? Just add the flesh of one avocado and blend with the first set of ingredients. Top with shredded coconut and additional hemp seeds cacao nibs.
