I love this blended juice! It is one of my all-time favorites because it is tart, tangy, and just a hint of sweetness. The advantage of blended juices is that the fiber is still present which helps balance blood sugar levels and helps with detoxification through elimination. (A nice way of saying fiber helps you poop!) All of the ingredients are hydrating, detoxifying and strengthening. Coconut water balances the intensity of the ginger, grapefruit and cilantro.
Makes approximately one 16-ounce serving, depending on the size of the grapefruit you use.
INGREDIENTS 1 medium to large pink or ruby red grapefruit, peeled with some of the white pith left on, then cut into chunks 2 stalks celery, chopped into chunks 1/4 cup cilantro leaves and stems, chopped 1/2" to 1" knob of fresh ginger root, chopped 1 cup or more of coconut water or water
Pour the coconut water or water into a blender or Vitamix. Add remaining ingredients and blend until smooth, adding more water or coconut water if necessary to reach your desired consistency.
