I came late to the 'salty-crunch' cult. Chips were never my thing. Until I discovered how to make dehydrated veggie chips. This recipe is a great way to transform that abundance of zucchini as long as they are smallish. The big zucchinis have too many large seeds in the center to dehydrate properly. Choose zucchinis that are less than 2 1/2 inches in diameter for the best chips.
INGREDIENTS
2 cups zucchini slices-- 1/4 inch thick (using a mandoline very carefully will make even slices very quickly) 2 tablespoons raw apple cider vinegar 2 teaspoons coconut palm sugar 1 teaspoon paprika 1 teaspoon chili powder 1/4 teaspoon cumin 1/4 teaspoon chipotle powder pinch of Himalayan or Celtic Sea Salt
Place the zucchini slices in a large bowl. Add the apple cider vinegar and toss them with your hands so that the slices are thoroughly coated.
In a small bowl, combine the coconut palm sugar with all of the spices and the salt. Mix these until the palm sugar and spices are are fully incorporated. If you have an empty spice jar with a shaker top, use a funnel* to pour the spice mixture into your jar and place the shaker top back on the jar. The shaker top will make it easier to season the zucchini chips in an even manner.
Lay the zucchini slices in a single layer on a non-reactive baking sheet or glass baking dish. Sprinkle with the spice blend and then flip them over and sprinkle the other side. Place the seasoned zucchini chips on a mesh dehydrator sheet, spaced so that air can circulate around the edges. Repeat and fill as many mesh sheets as needed.
Dehydrate the chips at 145 degrees F for 2 hours then reduce the temperature to 115 degrees F and dehydrate for 6 - 8 hours or overnight until the zucchini slices are as crisp and crunchy as potato chips.
Enjoy as chips or crumble them over a fresh salad made with cool, crisp romaine, fresh tomato, cucumber, avocado and organic corn kernels stripped from the cob and topped with this Creamy Sunflower Cilantro Dressing.
Store the chips in a tightly covered container for up to 2 weeks.......if they last that long!
